Watermelon Ice Lolly

Jennifer Lawlor

Say hello to one of Summer's simplest treats.

Made in a matter of minutes, and frozen and ready to eat in a few hours.

We made these deliciously simple watermelon ice lollies over the summer and it was a great easy recipe to make with the youngsters. They look so appetising, and on sweltering days were such a refreshing, healthy treat. With watermelon season coming to an end soon I'd advise you stock up and freeze these tasty treats asap!

Here's how we made them.

What you'll need:

  • Watermelon, sliced into triangle wedges
  • Lollypop sticks

How to make them:

Slice the watermelon into wedges.

Using a knife with a sharp tip make a small incision at the base of the watermelon where the green rind is. Slide the lollypop stick through until it's inserted into the centre of the fruit by about two inches.

Long live summer 2018!
